Warm Chicken Salad
Recipe



Warm chicken salad served in a salad dish.


This warm chicken salad recipe is inspired by the salads of my childhood. The ingredients are the same but the finished dish is much improved.

Radish, chicken, beetroot & spinach are great flavour partners and combine to make a mouth-
watering colourful dish that is a real star.




Warm chicken salad recipe: -

Prep time: 20 minutes - Cooking time: 25 minutes

Serves 2

1 large skinless chicken breast
3oz(100g) baby spinach leaves
3oz(100g) of organic cooked beetroot, sliced
2oz(75g) of organic radish, sliced
Zest of 1 orange
Freshly ground white pepper & sea salt

For the garlic yoghurt: -

9oz(250g) of zero fat Greek style natural yoghurt
1 tbsp of fresh mint, leaves only, chopped
1 tbsp of fresh parsley, leaves only, chopped
1-2 clove(s) of garlic, grated
Freshly ground white pepper & sea salt

First pre-heat your oven to 200˚C/400˚F/Gas 6 then take a baking sheet and place a piece of foil on it: add some seasoning to your chicken breast on both sides and place it on the foil. When the oven is pre-heated place it in the middle of the oven for 20-25 minutes until cooked through.

Meanwhile pour the Greek yoghurt into a bowl and add the grated garlic, some seasoning and the chopped mint & parsley: combine together then test the seasoning and alter to suit. Put to one side.

Next take a mandoline and carefully slice your radish and beetroot using as fine a setting as possible. Then take a large bowl and add your baby spinach leaves, then add the radish & beetroot to it and grate over the zest of an orange. Add some seasoning then combine all the ingredients, cover the bowl and put to one side.

When the chicken breast has been in the oven for 20 minutes take a skewer and push it into the fattest part of the breast, if the juices run clear then it's ready if they're pink then it needs more time in the oven.

When the chicken breast is ready take it out of the oven and put it to one side to cool a little; meanwhile plate up the salad mixture. Next slice the chicken breast into thin diagonal pieces and add them to each plate, then simply spoon over some of the garlic yoghurt and serve while warm.
