This three bean salad recipe is unlike traditional salads with leaves and vegetables and when you tuck into this you'll view salads differently, it's delicious.
Jam packed with nutrients this meal also involves hardly any preparation at all.
3 Bean Salad Recipe: -

Serves 3-4
5 oz (150g) of tinned kidney beans 5 oz (150g) of tinned cannelloni beans 5 oz (150g) of tinned borlotti beans 4 oz (115g) of tinned sweet corn 1 green bell pepper 3 tbsp of cider vinegar 2 tbsp of extra virgin olive oil 2 tsp of splenda 8 fresh mint leaves, chopped Fresh chives for garnish Sea salt & freshly ground pepper
First drain and rinse your beans thoroughly then place them in a large bowl; do the same for the sweet corn. De-seed and chop the green pepper into small dice then add to the other ingredients
Next add the cider vinegar, olive oil, mint, splenda, some sea salt and ground pepper then combine the ingredients together ensuring that everything is coated. Check the seasoning and alter it to suit.
Place the salad in the fridge and allow to chill for 2-3 hours. If you can leave it longer because it improves in flavour the longer you leave it. When you're ready to serve garnish with some chopped chives.
