Skinning Tomatoes

Some recipes call for fresh tomatoes to be skinned. Here's a quick guide to skinning tomatoes, nothing could be easier. The easiest way to remove tomato skins is by placing them in boiling water.

I prefer using a kettle and a jug to do this job; I feel this way I have more control over the temperature of the water than I would if I used a pan of boiling water on the stove.

Tomatoes in boiling water Before you add them to the water take each tomato and with a sharp knife make a small incision in the skin; this will encourage the skins to split.

Place the tomatoes in the jug and pour over some water from a kettle that's just boiled.

Making sure that there's enough water in the jug so that the tomatoes are completely submerged.

Tomatoes with split skin Leave the tomatoes in the boiling water for 10-15 seconds. The skins will already be starting to split.

Carefully remove the tomatoes straight away and refresh them in a bowl of ice cold water; this will stop the tomatoes from starting to cook. When they're cool enough to handle simply remove the skins and take out the eye: remove the seeds if you wish.
