Salad Nicoise Recipe

Salad Nicoise is a classic salad recipe and with good reason as it's absolutely delicious, and is jam packed with nutrients.

There's the tuna that is rich in omega 3 fatty acids, spinach that is full of iron and is a rich source of vitamins A & C, to name but two.

The recipe is a little more complex then most salad recipes but boy is it worth it!




Salad Nicoise Recipe: -

Prep time: 6 minutes - Cooking time: 20 minutes

Serves 3

1 x 9oz(250g) tuna steak
3 free-range eggs
3oz(100g) of thin green beans
4oz(115g) of spinach leaves
5oz(150g) cherry vine tomatoes
6oz(200g) of Jersey Royal potatoes
8 anchovy fillets, chopped (optional)
10 pitted black olives, chopped (optional)

For the dressing: -

3 tbsp of extra virgin olive oil
1 tbsp of red wine vinegar
1 tsp of Dijon mustard
Sea salt & freshly ground white pepper


It's a stretch to call this recipe simple but I've included it because it can be easy if all of your ingredients are prepared and at hand during the cooking process, as everything comes together within the last 2-3 minutes.

First wash then top and tail your green beans and set them to one side. Take your potatoes and give them a quick wash and cut them into quarters, or halves depending on their size. Then simply slice your tomatoes in half and place them to one side also.

Then combine dressing ingredients in a seal-able container and add some seasoning to taste. Next place a pan of salted water on a high heat and bring it to the boil. Add the potatoes and simmer for fifteen minute.

Meanwhile bring another pan of water to the boil and when the potatoes have been simmering for 9 minutes place your eggs in the pan and simmer them for five minutes.

Meanwhile prepare another pan of boiling water for your green beans. These need to be in boiling water for three minutes when they're done plunge them into cold water to refresh them.

At the same time place a non stick frying pan over a high heat and when it's hot add your tuna steak; sear it on both sides for 1-2 minutes only as it should be pink in the middle when it's served.

Next drain your potatoes and green beans and in a large bowl add them to the anchovy fillets, olives, spinach leaves & tomatoes.

Everything will start to coincide now. When they're ready take your eggs from the pan and place them in some cold water to stop them cooking as we want them to have gooey yolks. Then slice your tuna steak into thin slices and add them to the bowl, next take your dressing and give it a good shake so that it's emulsified, then add it to the bowl and combine everything.

Then plate up your Salad Nicoise, cut your eggs in half and place them on top of each plate letting the yolk ooze out; and finish with a little chopped fresh parsley. Then simply serve your salad nicoise recipe while it's warm.
