This simple onion soup recipe is a healthy alternative to the classic French Onion Soup that has butter, oil and cheese listed in it's ingredients.
This soup's healthy too with just one tablespoon of olive oil used for a recipe that serves three people.
Recipe for simple onion soup: -

Serves 3
1 large white onion, thinly sliced 1 large red onion, thinly sliced 1 cloves of garlic, chopped 1½ pints(30 fl-oz) of chicken stock ½ glass(75ml) of alcohol-free dry white wine 2 tsp of plain flour 1 tbsp of olive oil 1 pinch of paprika 1 tbsp of fresh thyme Sea salt & freshly ground pepper
Take a large saucepan, preferably non-stick, and place it over a low heat then add the tablespoon of olive oil and heat it through.
Next add the onion then stir once to coat in the oil; place the lid on and sweat for 10 minutes.
Stir occasionally to make sure the onions aren't catching. Towards the end of the cooking time the onions will start to caramelize intensifying their flavour.
Next add the garlic, flour & paprika then combine with the onions and cook it out for 2 minutes. Then add the wine and increase the heat; when the wine is completely absorbed add the stock and season lightly.
Increase the heat and bring the pan to the boil; then add the thyme. Reduce the heat and simmer half-covered for 5 minutes.
Alter the seasoning if required then your simple onion soup is ready to serve.
