This grilled mackerel recipe is just so easy to make and with just a brush of olive oil it's low in fat too.
Mackerel is rich in omega 3 and it works well with sharp sauces so for this recipe rhubarb works a treat.
Grilled Mackerel with Rhubarb Recipe: -

Serves 3
3 fresh whole mackerel, gutted, washed & heads removed 9oz(250g) of rhubarb, chopped 1 tsp of splenda Juice & zest of 1 orange 3 sprigs of rosemary 1 tsp of Olive oil Sea salt & freshly ground black pepper
First take the rhubarb and chop it into 1 inch pieces and place them in a saucepan, add the splenda & the juice from the orange. Place a moderate heat under the pan and stew the ingredients for 5-10 minutes until all the juice has reduced and about half of the rhubarb has broken down.
Take the pan off the heat and add the zest to the pan then combine; put to one side and allow to cool for a minute or two. Add some seasoning to the mixture and alter it to suite, then cover and keep warm.
Take your mackerel and make three slashes on either side. Season them inside and out then place a sprig of rosemary in each cavity. Then place the mackerel under a pre-heated hot grill for 8-10 minutes on either side until the mackerel is cooked through and the flesh comes away from the bone easily.
Then simply plate up your grilled mackerel and serve it with the stewed rhubarb and some minted jersey royal potatoes.
