Avocado and Grapefruit Salad is a classic combination of ingredients that work so well to together.
Along with creamy avocados, and the sweet citrus twang of the grapefruit, this recipe is served with delicious peppery watercress making this recipe a wonderful mixture of flavours and textures.
Avocado and Grapefruit Salad Recipe: -
Prep time: 20 minutes
Serves 3
5 oz (150g) of fresh watercress 2 pink grapefruits, segmented 2 ripe avocados, peeled, de-stoned & diced 4 spring onions, finely sliced
For the dressing:
1 tbsp of tarragon vinegar (or white wine vinegar) 3 tbsp of extra virgin olive oil Fine sea salt & freshly ground black pepper
First take your watercress and rinse it thoroughly in cold running water, then use a salad spinner to dry it out completely. This is important because any water on the leaves will weaken the dressing when it's added.
Next take your avocados and slice them in half, remove the stones and their skin, then cut the pieces into small dice and place them in a large bowl. Take the spring onions and slice them into fine round slices, add them to the bowl along with the watercress and combine together lightly then place to one side.
Next remove all of the peel from the grapefruits with a sharp knife, then cut out the flesh from each segment and drop them into a separate dish.
Take a container that has a tight fitting lid and add the olive oil and the tablespoon of tarragon vinegar, add some seasoning then shake vigorously to emulsify it. Check the seasoning and alter it to suite.
When your ready to serve your salad simply add the dressing to the other ingredients in the bowl and combine lightly so that everything is coated in the dressing. Divide between three plates then add the grapefruit segments to each plate.
