Healthy fish kebabs are just so easy to make. For this recipe I've used three of my favourite fish: Tuna, Monk Fish and Swordfish but these can be substituted to suite your own tastes.
Firm fish like Salmon & Marlin are an excellent alternative, as are cod and halibut.
One of the keys to grilling kebabs successfully is to ensure that all your pieces of fish and peppers are the same size so they cook at the same speed.
9oz(250g) of Monk fish, 1 inch cubes 10oz(300g) of Tuna, 1 inch cubes 10oz(300g) of Swordfish, 1 inch cubes 2 red bell peppers, de seeded cut & into 1 inch pieces 5 anchovy fillets, chopped 2½ tbsp of tomato purée 2½ tbsp of lemon juice 1 tsp of mustard seeds, ground 1 tbsp of olive oil, from the anchovies 1 dash of Tabasco 1 tbsp of chopped fresh parsley freshly ground black pepper
First take your skinned & boned fish fillets and prepare them buy washing them and patting them dry. Then take each fillet and cut them into even shaped 1 inch cubes, then set them aside.
Next prepare the marinade. Take the 5 anchovy fillets and drain them of the olive oil, retaining some of the oil, then chop them. Then take your mustard seeds and crush them in a pestle & mortar.
Next take a small dish and add the ground mustard seeds, lemon juice, tomato purée, chopped anchovies, some of the chopped parsley and a tbsp of the olive oil drained from the tin of anchovies. Combine together and add a some ground black pepper: only a little salt is required as the anchovies are salty.
Then take a medium sized freezer bag and spoon in the marinade, next add the fish cubes and tie a knot in the bag, then coat all of the fish in the marinade by squelching the contents of the bag. Place the bag in the fridge and leave to marinate for 1 hour.
Meanwhile prepare the peppers by de-seeding them and cutting them into 1 inch pieces.
When the fish is marinated pre-heat the grill to medium/high. Place the kebabs on some foil and grill for 4-6 minutes, turn once and repeat.
Then serve your healthy fish kebabs with some long grain white rice or a little salad.
