Crab Salad Recipe

Crab Salad Recipe

This Delightful crab salad recipe is an absolute joy and as far salads go this one is a breeze.

To make crab salad you can use either tinned or fresh crab, or a dressed crab as I have done here so that you can enjoy both the
light and the dark crab meat.

Crab Salad Recipe: -

Prep time: 20 minutes

Serves 3

7 oz (225g) of chicory leaves
2 Ripe avocados, peeled, de-stoned & diced
5 oz (150g) of dressed crab
1 small red onion, finely chopped
Juice of 1 lime
1 pinch of cayenne pepper
1 tbsp of finely chopped fresh chives, for garnish

For the dressing:

3 tbsp of extra virgin olive oil
1 tbsp of white wine vinegar
½ tsp of dried oregano
Fine sea salt and freshly ground black pepper

First take your chicory and cut off each root then seperate the leaves. Wash them in cold water then place them in a salad spinner to dry off the excess water as this will weaken the dressing.

Take a large bowl and add the chicory leaves, then add the diced avocado and chopped onion. Combine lightly then add the lime juice and pinch of cayenne pepper, then place to one side while you prepare the dressing.

Take a container that has a tight fitting lid and add the olive oil, the tablespoon of white wine vinegar and the oregano. Add some seasoning then shake vigorously to emulsify. Check the seasoning and alter it to suite.

When your ready to serve your crab salad simply add the dressing to the other ingredients in the bowl and combine lightly so that everything is coated in the dressing. Divide between three plates and garnish with the chopped fresh chives.
